Vila Real de Santo António

Located in the far southeast of the Algarve, where the Guadiana River meets the Atlantic Ocean, Vila Real de Santo António presents itself as a locality with a unique identity. Its foundation, driven by the Marquis of Pombal in the 18th century, is reflected in its geometric and organized urban layout, an uncommon characteristic in the Algarve region.

Xarém com Conquilhas

Speciality

This is a dish deeply rooted in the region's fishing tradition. Xarém is a type of corn porridge that, in this dish, is made with fresh cockles, garlic, cilantro, and sometimes a touch of olive oil. Its creamy texture and the salty taste of the cockles create a robust combination, linked to the livelihood of coastal communities and the abundance of this bivalve in the Guadiana estuary.

Atum de Cebolada

Reflecting the once prominent tuna fishing industry of eastern Algarve, tuna with onion is a simple yet flavorful dish. Fresh tuna steaks are stewed with abundant onion, olive oil, bay leaf, and a touch of vinegar, creating a sweet and sour sauce that complements the rich flesh of the fish. It was a common way to prepare fresh or canned tuna, making use of the sea's resources.

Cataplana de Marisco/Peixe

The cataplana is not just a dish but also a traditional Algarve kitchen utensil, a hermetically sealed copper pot that allows ingredients to be steamed. In the Seafood Cataplana, various types of shellfish, shrimp, and other crustaceans are cooked with tomatoes, onions, garlic, peppers, and aromatic herbs. In the fish version, various fresh fish from the coast are prepared similarly. This cooking method intensely preserves the flavors and succulence of the marine ingredients, being an example of resourceful cuisine and the freshness of local fish.

Caldeirada de Peixe

A hearty fish stew, caldeirada is a dish that fishermen would prepare on board with the day's catch that wasn't sold. Various types of fresh fish are slowly cooked with potatoes, onions, tomatoes, garlic, peppers, and a touch of white wine or beer. It is a dish that celebrates the diversity of local fish and the tradition of cooking with what the sea offers, resulting in a rich and comforting broth.

Dom Rodrigos

Speciality

These sweets, although popular throughout the Algarve, have a strong presence in Vila Real de Santo António. They are small and intense, made from egg threads, egg yolks, ground almonds, and sugar. The mixture is wrapped in parchment paper, forming small parcels. Their concentrated sweetness and soft texture reflect conventual tradition and the abundant use of regional products like eggs and almonds, cultivated in the Algarve's barrocal (hinterland).

Morgados

Speciality

Another pillar of Algarve's regional confectionery, morgado is a more substantial sweet, usually in cake form. It combines almonds, egg threads, figleaf gourd (chila), and sugar, sometimes covered with a thin layer of icing or decorated with candied fruit and sliced almonds. It is a rich sweet, representing the heritage of traditional pastry making, with ingredients abundant in the region and techniques passed down through generations.
